Description

Delicious and nutritious Skyr waffles, perfect for breakfast or as a snack, combining creamy Skyr with a hint of honey and optional cinnamon for a delightful treat.


Ingredients

  • 250 g Skyr
  • 2 Eggs
  • 100 g Oats
  • 1 tbsp Honey
  • 1 tsp Baking powder
  • 1 pinch Salt
  • 1 tsp Cinnamon (optional)

Instructions

  1. Prepare your ingredients: Bring all ingredients to room temperature.
  2. Mix the base: In a large bowl, whisk together skyr, eggs, and honey until smooth.
  3. Add the oats: Stir in the oats and let the mixture sit for 2 minutes.
  4. Incorporate spices: Gently fold in baking powder, salt, and optional cinnamon.
  5. Preheat the waffle iron and lightly grease it.
  6. Portion the batter: Pour about half a cup of batter into the waffle iron and close it.
  7. Bake the waffles for 4-5 minutes until steam dissipates and they are golden brown.
  8. Cool on a wire rack to maintain crispiness while baking the remaining waffles.

Notes

For a vegan option, replace eggs with a flaxseed substitute and use plant-based yogurt. Waffles can be prepared in advance and stored.
