Description

A comforting dish featuring tender cauliflower under a rich, golden cheese crust, ideal for family dinners or special occasions.


Ingredients

Scale
  • 1 head cauliflower
  • 200g cheese (e.g., Gouda, Emmental, cheddar, or mozzarella)
  • 200ml cream
  • 2 eggs
  • Salt and pepper to taste
  • Nutmeg (for a dash of warmth)
  • Butter (for greasing the baking dish)

Instructions

  1. Preheat your oven to 180°C (356°F) and grease your baking dish with butter.
  2. Cut the cauliflower into bite-sized florets and blanch in boiling salted water for 5-7 minutes. Drain well.
  3. Grate your cheese and set aside while the cauliflower cools.
  4. In a mixing bowl, whisk together the cream and eggs, and season with salt, pepper, and nutmeg.
  5. Arrange the blanched cauliflower evenly in the greased baking dish. Pour the creamy egg mixture over the cauliflower.
  6. Sprinkle the grated cheese over the top.
  7. Bake for 25-30 minutes until the cheese is golden brown and bubbling.
  8. Allow to rest for a few minutes before serving.

Notes

Make-ahead tips: Prepare the cauliflower and cheese sauce separately and store in the fridge. Combine before baking. Can be adapted for an air fryer.
