- 1 head cauliflower
- 200g cheese (e.g., Gouda, Emmental, cheddar, or mozzarella)
- 200ml cream
- 2 eggs
- Salt and pepper to taste
- Nutmeg (for a dash of warmth)
- Butter (for greasing the baking dish)
Instructions
- Preheat your oven to 180°C (356°F) and grease your baking dish with butter.
- Cut the cauliflower into bite-sized florets and blanch in boiling salted water for 5-7 minutes. Drain well.
- Grate your cheese and set aside while the cauliflower cools.
- In a mixing bowl, whisk together the cream and eggs, and season with salt, pepper, and nutmeg.
- Arrange the blanched cauliflower evenly in the greased baking dish. Pour the creamy egg mixture over the cauliflower.
- Sprinkle the grated cheese over the top.
- Bake for 25-30 minutes until the cheese is golden brown and bubbling.
- Allow to rest for a few minutes before serving.
Notes
Make-ahead tips: Prepare the cauliflower and cheese sauce separately and store in the fridge. Combine before baking. Can be adapted for an air fryer.
