Description

A vibrant stir-fry featuring fresh zucchini, bell peppers, carrots, and cherry tomatoes, enhanced by creamy feta and aromatic herbs.


Ingredients

  • 1 Bell Pepper (Red or Yellow), cut into bite-sized pieces
  • 1 Carrot, cut into bite-sized pieces
  • 200g Cherry Tomatoes, halved
  • 100g Feta, crumbled
  • 2 tablespoons Olive Oil
  • Salt and Pepper, to taste
  • Fresh Herbs (e.g., Basil or Parsley), for garnish

Instructions

  1. Prep the veggies: Wash all the vegetables thoroughly and cut them into bite-sized pieces.
  2. Heat the oil: In a large skillet, warm the olive oil over medium heat until it shimmers.
  3. Sauté the veggies: Add the zucchini, bell pepper, and carrot to the skillet and sauté for about 5–7 minutes until slightly softened but crunchy.
  4. Incorporate the tomatoes: Toss in the halved cherry tomatoes and stir for an additional 2-3 minutes until tender.
  5. Season with love: Add salt, pepper, and fresh herbs, stirring gently.
  6. Finish with feta: Crumble feta over the vegetables and allow it to warm.
