Description

  • 1/2 cup unsweetened cocoa powder
  • 1 cup almond flour (or regular flour)
  • 2 eggs (or 2 flax eggs for a vegan alternative)
  • 1/3 cup maple syrup (or sugar-free monk fruit syrup for keto-friendly version)
  • 1 teaspoon vanilla extract
  • 1 teaspoon baking powder
  • 1/4 teaspoon salt (optional)
  • 1 cup dark chocolate chips (optional, sugar-free options available)

Instructions

  1. Preheat your oven to 180°C (350°F).
  2. Mix the cottage cheese (or silken tofu) with the eggs (or flax eggs) and maple syrup until smooth using a hand mixer.
  3. Add cocoa powder, almond flour, vanilla extract, baking powder, and salt. Mix until well combined.
  4. Fold in the dark chocolate chips evenly throughout the batter.
  5. Grease a baking pan or line it with parchment paper.
  6. Pour the brownie mixture into the prepared baking pan.
  7. Bake for about 25-30 minutes or until a toothpick inserted comes out clean.
  8. Let the brownies cool in the pan for at least 10 minutes before transferring them to cool completely on a wire rack.

Notes

For quick results, you can bake these in an air fryer at 160°C (320°F) for about 20 minutes. Store in an airtight container for up to a week.
