- 1 pound Chicken Breast, cut into bite-sized pieces
- 1 cup Rice (Jasmine or Basmati)
- 2 tablespoons Cajun Spice
- 1 cup Cream (Heavy)
- 1 cup Cheese (Cheddar or Gouda, shredded)
- 1 Onion, diced
- 3 cloves Garlic, minced
- 2 cups Chicken Broth
- 1 Bell Pepper, chopped
- 2 tablespoons Parsley, chopped
Instructions
- Prepare the Chicken: Cut the chicken breast into bite-sized pieces. Heat a large skillet over medium heat, adding a splash of oil. Once hot, add the chicken. Sauté until golden brown, about 5-7 minutes.
- Add Onions and Garlic: Incorporate the diced onion and minced garlic into the skillet with the chicken. Sauté until the onions become translucent and tender, approximately 3-4 minutes.
- Incorporate the Rice: Add the uncooked rice into the mixture, stirring lightly to coat it with the juices and flavors. Toast it for about 1-2 minutes.
- Sprinkle the Cajun Spice: Sprinkle the Cajun spice mix over the mixture, stirring well. Pour in the chicken broth and cream, stirring again.
- Bring to a Boil: Increase the heat and bring the mixture to a gentle boil. Cover the skillet, reduce the heat to low, and let it simmer for 15-20 minutes.
- Cheesy Goodness: After simmering, uncover the skillet and sprinkle the shredded cheese on top. Cover again for a few minutes until the cheese melts.
- Garnish and Serve: Chop fresh parsley and sprinkle it over the top. Serve hot.
Notes
Make-Ahead: Store in the fridge for up to 3 days or freeze for later use. Can swap chicken for shrimp or use cauliflower rice for variations.
