Ingredients

  • 300 g Pasta (your choice, such as penne or fusilli)
  • 400 g Chicken Breast, cubed
  • 200 g Feta Cheese, crumbled
  • 3 Garlic Cloves, minced
  • 1 Onion, diced
  • 200 ml Cream
  • 100 ml Chicken Broth
  • 2 tablespoons Olive Oil
  • 1 teaspoon Oregano
  • Salt and Pepper to taste
  • Fresh Parsley for garnish

Instructions

  1. Cook the Pasta: Bring a large pot of salted water to a rolling boil. Add the pasta and cook until al dente, about 8-10 minutes. Drain and set aside, reserving some pasta water for later if needed.
  2. Prepare the Chicken: While the pasta cooks, dice your chicken breast into even cubes. Season generously with salt, pepper, and oregano for a flavor-packed base.
  3. Sear the Chicken: Heat olive oil in your skillet over medium-high heat. Add the seasoned chicken and cook until golden and cooked through, about 5-7 minutes. Remove the chicken from the skillet and set aside.
  4. Sauté Aromatics: In the same skillet, reduce to medium heat and add the diced onion. Sauté until soft and translucent, about 3 minutes. Add minced garlic and cook until fragrant, about 1 minute.
  5. Create the Sauce: Pour in the chicken broth, bringing it to a gentle simmer; scrape the flavorful bits from the bottom of the skillet. Then, stir in the cream, allowing it to thicken slightly. Incorporate crumbled feta, stirring until melted and combined.
  6. Combine Everything: Add the cooked chicken and pasta back into the skillet. Toss everything together until it’s thoroughly coated in the luscious sauce. If it feels too thick, add a splash of reserved pasta water to loosen it.
  7. Season and Serve: Taste your creation! Adjust with salt, pepper, and a sprinkle of oregano. Garnish with fresh parsley for that vibrant touch.

Notes

Make-Ahead: This dish can easily be prepped in advance. Cook the chicken and sauce a day before, then simply reheat and add the pasta when it’s time to eat!
