- 400 g Chicken Breast, cubed
- 200 g Feta Cheese, crumbled
- 3 Garlic Cloves, minced
- 1 Onion, diced
- 200 ml Cream
- 100 ml Chicken Broth
- 2 tablespoons Olive Oil
- 1 teaspoon Oregano
- Salt and Pepper to taste
- Fresh Parsley for garnish
Instructions
- Cook the Pasta: Bring a large pot of salted water to a rolling boil. Add the pasta and cook until al dente, about 8-10 minutes. Drain and set aside, reserving some pasta water for later if needed.
- Prepare the Chicken: While the pasta cooks, dice your chicken breast into even cubes. Season generously with salt, pepper, and oregano for a flavor-packed base.
- Sear the Chicken: Heat olive oil in your skillet over medium-high heat. Add the seasoned chicken and cook until golden and cooked through, about 5-7 minutes. Remove the chicken from the skillet and set aside.
- Sauté Aromatics: In the same skillet, reduce to medium heat and add the diced onion. Sauté until soft and translucent, about 3 minutes. Add minced garlic and cook until fragrant, about 1 minute.
- Create the Sauce: Pour in the chicken broth, bringing it to a gentle simmer; scrape the flavorful bits from the bottom of the skillet. Then, stir in the cream, allowing it to thicken slightly. Incorporate crumbled feta, stirring until melted and combined.
- Combine Everything: Add the cooked chicken and pasta back into the skillet. Toss everything together until it’s thoroughly coated in the luscious sauce. If it feels too thick, add a splash of reserved pasta water to loosen it.
- Season and Serve: Taste your creation! Adjust with salt, pepper, and a sprinkle of oregano. Garnish with fresh parsley for that vibrant touch.
