- 500g Ground Meat (Beef or Mixed)
- 800g Waxy Potatoes
- 2 Onions
- 2 Carrots
- 1 Bell Pepper
- 500ml Vegetable Broth
- 3–4 tbsp Oil (Canola or Olive Oil)
- Salt, Pepper, and Cumin
Instructions
- Start by peeling the onions and carrots, dicing them finely. Remove the seeds from the bell pepper and chop it into small pieces.
- Heat oil in a large pot over medium heat. Add the ground meat, cooking it until it’s browned and loses all traces of pink.
- Toss in the onions, carrots, and bell pepper, stirring briefly to incorporate.
- Peel the potatoes and cut them into even-sized cubes. Add the potatoes to the pot.
- Pour in the vegetable broth, allowing it to come to a gentle boil. Season with salt, pepper, and cumin.
- Reduce the heat to low and cover the pot. Let it simmer for 30-40 minutes until the potatoes soften beautifully.
- Serve hot, inviting everyone to enjoy the comforting flavors.
