Description

A light and crispy fried rice dish made in the air fryer, featuring tender chicken, colorful vegetables, and a blend of savory flavors.


Ingredients

  • 2 cups cooked rice
  • 300 g chicken breast, diced
  • 1 cup frozen vegetables (peas, carrots, bell peppers)
  • 2 eggs
  • 3 tablespoons soy sauce
  • 1 tablespoon vegetable oil
  • 1 teaspoon sesame oil
  • Green onions for garnish
  • Salt and pepper to taste

Instructions

  1. Season the chicken: Sprinkle salt and pepper over the diced chicken breast.
  2. Preheat your air fryer to 180°C and add vegetable oil to coat the basket.
  3. Cook the chicken for 10 minutes until golden brown.
  4. Add frozen vegetables and cooked rice; mix well and return to fryer for 5 minutes.
  5. Scramble the eggs in a separate bowl and add to the rice mixture; cook for another 5 minutes.
  6. Season with soy sauce and sesame oil, stirring until well combined.
  7. Garnish with freshly sliced green onions and serve while hot.

Notes

Use day-old rice for best texture; feel free to customize with your choice of proteins or vegetables.
