Description

A delightful cake featuring tart gooseberries and a creamy vanilla pudding layer, evoking warm childhood memories.


Ingredients

  • 500g Gooseberries
  • 200g Sugar
  • 2 Päckchen Vanilla Pudding Powder
  • 500ml Milk
  • 150g Butter
  • 200g Flour
  • 1 Packet Baking Powder
  • A Pinch of Salt
  • 3 Eggs

Instructions

  1. Preheat your oven to 180°C (356°F).
  2. Cream together the butter and sugar until light and fluffy.
  3. Add the eggs one at a time, beating well after each addition.
  4. Sift together the flour, baking powder, and salt, then gradually incorporate them into your batter, mixing until just combined.
  5. Pour and spread the batter into a greased baking dish.
  6. Scatter the fresh gooseberries over the cake batter.
  7. Combine the vanilla pudding powder with the milk in a saucepan, whisking until thick, then pour over the gooseberries.
  8. Bake for 40-45 minutes until golden.
  9. Let cool before serving.

Notes
