Instructions
- Preheat your oven to 180°C (356°F).
- Cream together the butter and sugar until light and fluffy.
- Add the eggs one at a time, beating well after each addition.
- Sift together the flour, baking powder, and salt, then gradually incorporate them into your batter, mixing until just combined.
- Pour and spread the batter into a greased baking dish.
- Scatter the fresh gooseberries over the cake batter.
- Combine the vanilla pudding powder with the milk in a saucepan, whisking until thick, then pour over the gooseberries.
- Bake for 40-45 minutes until golden.
