- 8 oz cream cheese, softened

Instructions
- Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
- In a large bowl, cream together the softened butter, brown sugar, and granulated sugar until light and fluffy.
- Add the eggs one at a time, mixing well after each addition.
- Mix in the vanilla extract.
- In a separate bowl, combine the flour, baking soda, and salt.
- Gradually add the dry ingredients to the wet mixture, stirring until just combined.
- For the cheesecake filling, beat the cream cheese until smooth, then add the powdered sugar, vanilla extract, and lemon juice, mixing until creamy.
- Scoop a tablespoon of cookie dough, flatten it, place a teaspoon of cheesecake filling in the center, and wrap the dough around it.
- Place the cookie balls on the baking sheet and repeat the process.
- Bake for 10-12 minutes, until the edges are golden. Do not overbake.
- Let the cookies cool for a few minutes before transferring them to a cooling rack.
