- 200 g Sugar
- 200 g Butter
- 4 Eggs
- 300 g Flour
- 1 Packet Baking Powder
- 200 ml Milk
- Zest and Juice of 2 Lemons
- Powdered Sugar for Dusting
Instructions
- Preheat your oven to 180°C (356°F) and line your baking tray with parchment paper.
- Beat together the butter and sugar in a large mixing bowl using an electric mixer until light and fluffy, about 3-5 minutes.
- Add the eggs one by one, mixing well after each addition.
- Combine the flour and baking powder in a separate bowl and gradually fold this into the wet mixture, alternating with the milk.
- Fold in the lemon juice and zest until just combined.
- Pour the batter into your prepared tray, smoothing the top with a spatula.
- Bake for 25-30 minutes until golden and a toothpick inserted comes out clean.
- Cool in the tray for about 10 minutes before transferring to a wire rack. Dust with powdered sugar before serving.
