Description

A moist and flavorful lemon cake with a perfect balance of sweetness and tang, ideal for any occasion.


Ingredients

Scale
  • 200 g Sugar
  • 200 g Butter
  • 4 Eggs
  • 300 g Flour
  • 1 Packet Baking Powder
  • 200 ml Milk
  • Zest and Juice of 2 Lemons
  • Powdered Sugar for Dusting

Instructions

  1. Preheat your oven to 180°C (356°F) and line your baking tray with parchment paper.
  2. Beat together the butter and sugar in a large mixing bowl using an electric mixer until light and fluffy, about 3-5 minutes.
  3. Add the eggs one by one, mixing well after each addition.
  4. Combine the flour and baking powder in a separate bowl and gradually fold this into the wet mixture, alternating with the milk.
  5. Fold in the lemon juice and zest until just combined.
  6. Pour the batter into your prepared tray, smoothing the top with a spatula.
  7. Bake for 25-30 minutes until golden and a toothpick inserted comes out clean.
  8. Cool in the tray for about 10 minutes before transferring to a wire rack. Dust with powdered sugar before serving.

Notes

Make-ahead by baking a day in advance. Store wrapped at room temperature for the best flavor.
