- 200g Rice (preferably basmati or jasmine)
- 150g Feta cheese, crumbled
- 1 Onion, chopped finely
- 2 Garlic cloves, minced
- Olive oil
- Salt and pepper to taste
- Herbes de Provence
Instructions
- Start by cooking the rice according to package directions.
- While the water for the rice heats up, dice the zucchini into small cubes and chop the onion finely.
- In a large skillet, heat olive oil over medium heat, then add the chopped onion and garlic, sautéing until fragrant.
- Toss in the zucchini, sautéing for another 5 to 7 minutes until soft.
- Combine the cooked rice with the zucchini mixture, stirring gently.
- Crumble the feta cheese over the top and gently mix it in.
- Season with salt, pepper, and herbes de Provence, folding everything together.
- Allow the dish to heat through briefly, then serve fresh.
