Description

A vibrant and healthy dish featuring zucchini, rice, and feta, perfect for family dinners or gatherings.


Ingredients

  • 2 Zucchini, diced
  • 200g Rice (preferably basmati or jasmine)
  • 150g Feta cheese, crumbled
  • 1 Onion, chopped finely
  • 2 Garlic cloves, minced
  • Olive oil
  • Salt and pepper to taste
  • Herbes de Provence

Instructions

  1. Start by cooking the rice according to package directions.
  2. While the water for the rice heats up, dice the zucchini into small cubes and chop the onion finely.
  3. In a large skillet, heat olive oil over medium heat, then add the chopped onion and garlic, sautéing until fragrant.
  4. Toss in the zucchini, sautéing for another 5 to 7 minutes until soft.
  5. Combine the cooked rice with the zucchini mixture, stirring gently.
  6. Crumble the feta cheese over the top and gently mix it in.
  7. Season with salt, pepper, and herbes de Provence, folding everything together.
  8. Allow the dish to heat through briefly, then serve fresh.

Notes
