Description

A refreshing salad featuring vibrant vegetables, crunchy peanuts, and a creamy peanut dressing.


Ingredients

  • 1 head romaine lettuce, washed and torn into pieces
  • 1 cup shredded carrots
  • 1 cup cucumber, diced
  • 1 cup red bell pepper, diced
  • 1 cup fresh cilantro leaves, roughly chopped
  • 1 cup unsalted peanuts, roughly chopped
  • ¼ cup toasted sesame seeds
  • 3 green onions, sliced thin
  • 4 tablespoons peanut butter
  • 3 tablespoons soy sauce
  • 2 tablespoons honey
  • 2 tablespoons rice vinegar or apple cider vinegar
  • 1 tablespoon sesame oil
  • 2 teaspoons fresh lime juice
  • 1 teaspoon minced ginger (optional)

Instructions

  1. Prep your fresh ingredients: Tear the romaine lettuce into small pieces and place them into a large mixing bowl. Shred the carrots, dice the cucumbers, and chop the red bell pepper. Add all of these vibrant veggies to the bowl.
  2. Fill the mixing bowl: Toss in the roughly chopped cilantro leaves, thinly sliced green onions, and coarsely chopped peanuts.
  3. Prepare the dressing: In a separate bowl, whisk together the peanut butter, soy sauce, honey, rice vinegar, sesame oil, lime juice, and optional ginger until smooth.
  4. Combine: Gradually pour the dressing over your salad mixture, tossing gently to coat all pieces.
  5. Add the sesame: Sprinkle the toasted sesame seeds over the top before serving.
  6. Serve: This salad tastes best when fresh but can be refrigerated briefly to meld flavors.

Notes

For a gluten-free version, use tamari in place of soy sauce. Customize with additional ingredients like diced mango or shredded cabbage.
