- 1 head romaine lettuce, washed and torn into pieces
- 1 cup shredded carrots
- 1 cup cucumber, diced
- 1 cup red bell pepper, diced
- 1 cup fresh cilantro leaves, roughly chopped
- 1 cup unsalted peanuts, roughly chopped
- ¼ cup toasted sesame seeds
- 3 green onions, sliced thin
- 4 tablespoons peanut butter
- 3 tablespoons soy sauce
- 2 tablespoons honey
- 2 tablespoons rice vinegar or apple cider vinegar
- 1 tablespoon sesame oil
- 2 teaspoons fresh lime juice
- 1 teaspoon minced ginger (optional)
Instructions
- Prep your fresh ingredients: Tear the romaine lettuce into small pieces and place them into a large mixing bowl. Shred the carrots, dice the cucumbers, and chop the red bell pepper. Add all of these vibrant veggies to the bowl.
- Fill the mixing bowl: Toss in the roughly chopped cilantro leaves, thinly sliced green onions, and coarsely chopped peanuts.
- Prepare the dressing: In a separate bowl, whisk together the peanut butter, soy sauce, honey, rice vinegar, sesame oil, lime juice, and optional ginger until smooth.
- Combine: Gradually pour the dressing over your salad mixture, tossing gently to coat all pieces.
- Add the sesame: Sprinkle the toasted sesame seeds over the top before serving.
- Serve: This salad tastes best when fresh but can be refrigerated briefly to meld flavors.
Notes
For a gluten-free version, use tamari in place of soy sauce. Customize with additional ingredients like diced mango or shredded cabbage.
