A delightful and refreshing dessert combining the flavors of pistachios and raspberries in a light and creamy tiramisu.

- 200 g ladyfingers
- 250 g mascarpone
- 200 ml heavy cream
- 100 g ground or chopped pistachios
- 150 g fresh raspberries
- 50 g sugar
- 1 tsp vanilla extract
- Coffee or sweet syrup for dipping ladyfingers
Instructions
- Whip the cream in a large bowl until stiff peaks form.
- Fold the whipped cream into the mascarpone, sugar, and vanilla extract until well combined.
- Add the ground pistachios and gently mix to maintain the airy texture.
- Dip a layer of ladyfingers briefly in coffee or sweet syrup and layer them in a baking dish.
- Spread half of the pistachio cream evenly over the ladyfingers and lightly press down.
- Place a layer of fresh raspberries on top of the pistachio cream.
- Repeat the process with another layer of ladyfingers, pistachio cream, and raspberries until all ingredients are used.
- Finish with the remaining pistachio cream on top.
- Chill the tiramisu in the refrigerator for at least 4 hours, or overnight for best flavor.
- Garnish with chopped pistachios and fresh raspberries before serving.
Notes
Prepare the tiramisu a day in advance for enhanced flavor complexity. You can experiment with different berries or nuts for variations.
