Description

These Vegan Lasagna Rolls are a delightful medley of flavors filled with creamy hummus, earthy mushrooms, and vibrant spinach, all wrapped in tender lasagna sheets and baked in tangy tomato sauce.


Ingredients

  • Lasagna Sheets
  • Hummus
  • Spinach
  • Mushrooms
  • Garlic
  • Onion
  • Olive Oil
  • Salt and Pepper
  • Herbs de Provence
  • Tomato Sauce

Instructions

  1. Preheat your oven to 180°C (350°F).
  2. Cook the lasagna sheets according to package instructions until al dente.
  3. Heat a sauté pan over medium heat and drizzle in the olive oil.
  4. Add the diced onion and minced garlic, sautéing until golden brown, about 3-4 minutes.
  5. Toss in the sliced mushrooms and cook for about 5 minutes until softened.
  6. Introduce the spinach and let it wilt for another 2-3 minutes.
  7. Blend the sautéed vegetables with hummus in a mixing bowl and season with salt, pepper, and herbs de Provence.
  8. Take a lasagna sheet and spread a few tablespoons of the mixture along one edge, then roll it up gently.
  9. Place the rolls seam side down in a baking dish and cover generously with tomato sauce.
  10. Bake in the preheated oven for 25-30 minutes until heated through and slightly browned on top.
  11. Serve warm and enjoy!

Notes

You can assemble the rolls a day in advance and store them in the fridge.
