Instructions
- Preheat your oven to 180°C (350°F).
- Cook the lasagna sheets according to package instructions until al dente.
- Heat a sauté pan over medium heat and drizzle in the olive oil.
- Add the diced onion and minced garlic, sautéing until golden brown, about 3-4 minutes.
- Toss in the sliced mushrooms and cook for about 5 minutes until softened.
- Introduce the spinach and let it wilt for another 2-3 minutes.
- Blend the sautéed vegetables with hummus in a mixing bowl and season with salt, pepper, and herbs de Provence.
- Take a lasagna sheet and spread a few tablespoons of the mixture along one edge, then roll it up gently.
- Place the rolls seam side down in a baking dish and cover generously with tomato sauce.
- Bake in the preheated oven for 25-30 minutes until heated through and slightly browned on top.
- Serve warm and enjoy!
